Shapeshifter is an excellent emulator for 68k and Power PC Macintosh up to OS9. I don't use the Amstrad CPC much, but when I do I use WinAPE. I also found that to be a bit tricky to use, but recent versions have improved it. SainT is also excellent and has the most realistic CRT filter I've ever seen, though I personally found it to be a bit fiddly to use. For the ST, Steem SSE has served me very well. There are a lot of Spectrum emulators out there. VICE also supports the PET, VIC-20 and C128. I personally use the much lesser known micro64, which you may want to try.
